Easy Pasta Salad
Today is my oldest's 14th birthday and I am making one of his favorite meals for dinner tonight and one of the sides that I always make to go with it is my Easy Pasta Salad. If you know me personally then I am sure you have already tried this dish since it's one of my favorite go to for dinner parties or potlucks.
EASY PASTA SALAD
You will need:
1 Green Bell Pepper
1 Cucumber
1 package of green onions
Garden Pasta Noodles
Pepperoni
Mozzarella Cheese
Italian Dressing
First thing you will want to do is boil the pasta. There is no particular pasta that you have to use for the recipe but I personally love to use a garden pasta. While the pasta is cooking, you will want to chop up your green bell pepper, cucumber and green onions and put them into a bowl. After that, you will take your pepperoni and add them into the bowl. I normally like to buy the regular size pepperoni versus the mini and cut them in half. I personally think they taste better. I then add in one bag of mozzarella cheese and mix all together. Once your noodles are finish, you will want to drain them and rinse them in cold water before putting in your bowl. Add your pasta and about half a bottle of Italian dressing or more depending on your preference. I normally start off with half and then stick the bowl into the fridge for a few hours. The noodles will soak up some of the dressing so before you serve your pasta salad, you will want to add a little bit more dressing and stir together before serving. This recipe makes a lot of pasta salad so you can easily eat it for an extra few days. To kick it up a notch, I also like to add chucks of pepper jack cheese to add a little spice.
