Easy Spinach + Bacon Muffins

This past weekend I hosted a fun brunch for a few of my girlfriends and I tried a new recipe for the first time and I loved how they turned out and how easy they were to make. I normally like to serve a quiche during brunch but with two friends being gluten free, I decided to use the same concept but bake them in a muffin tin minus the crust to make them gluten free friendly. 

Easy Spinach + Bacon Muffins

8 whole eggs (5 with the yolk + 3 egg whites only) 

6 slices of bacon chopped up 

1-2 cups of spinach chopped 

1 red bell pepper diced 

1 cup of shredded cheese (I used a Mexican mix)

1 cup of milk

salt + pepper  

In a large bowl, mix all the eggs together. Add in the milk, cheese, salt + pepper, spinach and diced red bell pepper.  Grease your muffin tin and pour the mixture in. Bake at 350 degrees for 20-25 minutes. This recipe yields 12 breakfast muffins.
