Cookbook Club + Chrissy Teigen's Shrimp Summer Rolls

Last night I went to my first Cookbook Club ( Thanks Katie @tulsadetails for inviting me! ) and I had such a great time! Starting a cookbook club or being in a cookbook club was one of my goals for 2018 and I am thrilled to be able to mark this goal off my list. Last night we each cooked a recipe or two from Chrissy Teigen's cookbook Cravings and everything was delicious and unfortunately, we were so busy stuffing our faces that I didn't snap any photos of all the dishes but I will share them in this post. I actually got Chrissy Teigen's cookbook last year and I have been surprised how delicious and easy her recipes are so when I found out this was the cookbook we were going to cook from, I was super excited!

For my dish, I decided to make her Shrimp summer rolls and they turned out so good! I will definitely will be making this recipe again and it was so easy to put together. 

SHRIMP SUMMER ROLLS

You Will Need:

Red Leaf Lettuce Leaves

Kosher Salt

Shrimp, cooked and peeled ( I used larger shrimps and cut them in half ) 

Thin Asian rice noodles ( Vermicelli ) I like to get mine at the Asian Store

Fresh Basil 

Thin julienne carrots ( You can also use shredded carrots ) 

Fresh Mint Leaves

1 Avocado, thinly slice

Rice Paper Wrappers ( I like to get mine at the Asian Store ) 

Thai Sweet Chili or Peanut Sauce

Once all my items were prepped, I set up an assembly lime and made all my rolls. To make them easier to eat, I decided to serve them cut in half and I paired it with Trader Joe's Sweet Thai Chili Sauce for dipping.

Some of the other dishes that were served were Roasted Cauliflower Feta and Orzo Salad, Cheesy Guacamole, Sour Cream and Broccoli Baked Potato Cakes, Tomato/Herbed Cheese and Chicken Lettuce Wraps which were all amazing and I would highly recommend picking up this cookbook if you don't already own it.
